What you'll be doing

Closely oversees day to day activities of employees who operates and maintains food production and service areas. Trains and directs employees in the preparation and service of meals using established food safety guidelines, procedures and quality control. Assigns tasks, checks work areas at frequent interval. Maintains and follows appropriate personnel actions within organization. Understands collective bargaining agreements. Supervises and follows approved cash and payment handling policies and procedures. Purchases food products and supplies as needed for special events and catering. Conducts weekly inventories, making adjustments as necessary to maintain accurate budget information and precise accounting of food and non-food items. Utilizes and maintains various systems daily, including: menu management systems and data bases, purchasing systems for all perishable and non-perishable food from designated vendors. Monitors cost and provides analysis on price increases and other cost considerations. Tracks over 1000 food items each of which contains numerous parameters for purchasing, receiving, storage and production. Supervises entry of invoices, transfers and inventories into database. Performs weekly analysis of: physical inventory, production and service records, patron counts for catered events, menu pre-cost and post cost reports and food trends to accurately forecast expected food usage. Responsible for the maintenance and repair of food production equipment. Maintains food cost within budgetary requirements. Reviews menus daily and weekly and independently adjusts or determines quantities as necessary. Prepares and assists in the production of menu items following department recipes in accordance with departmental policies and procedures. Manages the maintenance and cleanliness of the food production areas, including the kitchen, service areas, storage areas, receiving, dock, and trash area. Identifies and resolves a wide range of quality assurance issues in creative and imaginative ways. Merchandises food as required for location. Supervises and follows approved cash and payment handling policies and procedures. Assists functional unit as needed. Operates a campus vehicle for deliveries, etc. Maintains exceptional customer service standards. Ensures superior service during all on and offsite catered events.

What your background should be

2 years or more supervisory experience in food service or similar operation. Experience in a food service operation at college of university. Working knowledge in food service and sanitation regulations. Working verbal and written communication skills in the English language, including active listening, dynamic flexibility, critical thinking and ability to multi-task and ensure productive time management. Working knowledge to make appropriate decisions, reasoning skills, ability to develop original ideas to solve problems and conduct basic operations analysis and quality control analysis. Demonstrated experience in effective interpersonal and work supervision guidance to other personnel. Basic computer applications skills.
