What you'll be doing
- Issue and review preliminary and final gls and p&ls. Hold monthly p&l meetings with all outlet department heads. Oversee the preparation of weekly and monthly forecast reports, analysis, trends and comparison reports. Prepare projects including but not limited to budgeting, staffing analysis and profitability studies. Utilize a variety of history, pacing, segmentation, and pricing reports to ensure accurate forecasting. Manage expenses for the division. Process non po invoices as they come in from vendors. Create annual forecast reports and business plans in conjunction with finance. Analyze and maintain menu profitability through item cost analysis. Maintain complete knowledge of and comply with all departmental policies/service procedures/standards. Maintain complete knowledge of property management system and manual procedures. Assist with the creation of the annual food & beverage budget. Maintain confidentiality and security of all information, correspondence, reports and files. Review and issue weekly fte report, compile explanations for variances. Assist finance with special projects, event budgets, and monthly requests. Review comp expenses by dept. And reclassify if necessary. Perform all other job related duties as requested.
What your background should be
- Ability to work independently, under extreme timeline pressure with little supervision. Working knowledge of restaurant operations, both front of the house and back of the house. Advanced math skills and ability to create and understand mathematical formulas. Ability to lead and mentor a team. Ability to work varied shifts, including weekends and holidays.
Required Schooling / Training
- Bachelor degree in a related field.
